Toscana
Varietal: Ansonica
Bibi Graetz is a man on mission. From his Castello di Vincigliata base in the hills above Florence, Bibi is restoring traditional Tuscan varieties to their rightful place at the top of Tuscan viticulture. The passion to keep the history and character of Tuscan wines has led Bibi to the tiny island of Giglio which is located of the southern coast of Tuscany. Vines have flourished on Giglio for a millennia and this is Bibi’s first release from the island. Made from 100% Asonica this screams the Mediterranean with its honeyed apricots, flowers, oyster shell and minerals. Texturally very interesting with a nice contrast between ripeness and mineral like acidity. This is an incredibly delicious wine that keeps your interest throughout the whole bottle.
The “azienda” owns 4 hectares of vineyards. In addition to this, 10.5 hectares of vineyard are rented on a longterm basis and cultivated directly by the “azienda”. The main grape is the sangiovese ( 65-70%), followed by colorino and canaiolo (30%), and there are also some rows of black muscat and black malmsey. The age of the vineyards varies a lot, there are new plants not yet productive, but the major part of the vineyards varies from 15 to 60 years old. The selected method of growing is guyot and double guyot. This allows for a natural limitation of the production of grapes for each stub.

Dorigo Ribolla Gialla
This wine is a clear straw yellow. Florality predominates in the nose which is complemented by back-
ground notes of tropical fruit. The palate is very savory, with pronounced yet well-balanced acidity- fresh, minerally finish.
The grapes were picked in mid September. On arrival at the cellar, they were chilled with
carbon dioxide snow before crushing to preserve their aromas. Alcoholic fermentation took place in
stainless steel vats at controlled temperatures, in order to retain the variety’s subtle sensory characteristics.
Ribolla Gialla is indisputably native to Friuli, where it is cultivated almost exclusively in the hill country, including the Carso plateau as far as Istria. The variety gives the best results in hillslope vineyards at comparatively high planting densities.
